Recipe Collection: Breakfasts

You can make meals even easier by planning a breakfast or lunch at a local restaurant. Ask the park staff for recommendations.

Blueberry Maple Pancakes

You'll need a small pot, griddle or large fry pan, and a fire with a grill or 2-burner stove.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes


1 pint blueberries
1 pint maple syrup
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup milk
1 large egg
2 tablespoons melted butter
2 tablespoons maple syrup
cooking oil


Pour maple syrup into small pot and heat. Reserve 2 tablespoons for batter. Put half of the blueberries in the syrup to heat. When syrup begins to boil, mash the blueberries with the back of a spoon. Heat for another minute while mixing, and then set aside. Mix flour, baking powder, baking soda and salt in a bowl. Mix milk, beaten egg, melted butter, 2 tablespoons maple syrup and remaining blueberries in another bowl. Pour dry ingredients into the wet ingredients and mix thoroughly. Pour 1/4 cup of batter onto hot, greased skillet or griddle. Cook until golden brown, flip and cook other side the same way. Serve with blueberry maple syrup, bacon or sausage, and a cup of hot coffee.

Stuffed French Toast

This is delicious with any kind of fruit, but kids seem to like it with bananas the best. You will need a large fry pan or griddle.

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes


2 slices bread (cinnamon swirl is good)
1 egg
2-3 tablespoons milk
cream cheese
1/2 banana, sliced
1 teaspoon nuts, chopped
maple syrup


Heat griddle. Spray with cooking spray or melted butter. Mix egg and milk, and dip bread into it. Put 1 slice on griddle, place 2 slices of cream cheese, sliced banana and walnuts on bread. Top with second dipped bread. Cook until brown. Serve with butter and maple syrup.

Fruit & Yogurt Parfaits

This dish is fun because everyone can make their own and, it tastes delicious. Plus, its simple with little clean up.

Prep Time: 15 minutes
Total Time: 15 minutes


20-ounce tub of vanilla yogurt
Mix and match the following fruit, or chose your own:
1 cup sliced bananas
1 cup diced strawberries
1 cup blueberries
1 cup diced kiwi
1 bag of grapes
chopped nuts

Mix all the fruit together in a large bowl. Put a one inch layer of yogurt on the bottom of a clear plastic cup. Next add 1/4 cup of fruit followed by another layer of yogurt. Continue adding layers until the cup is full. You can add some chopped nuts of your choice to the top. It's fun to use clear plastic cups so you can see the layers
